Can AI Build a HACCP Plan? What Small Producers Need to Know

A straight answer on whether AI can build a HACCP plan you can trust. The difference between AI-generated templates and a deterministic system, and what to look for if you're considering an AI tool for food safety.

A fair question to be sceptical about

If you run a food business, you've probably noticed that AI is suddenly attached to everything. So when someone tells you AI can write your HACCP plan, healthy scepticism is the right starting point. A HACCP plan is a food safety document. If it's wrong, people can get hurt, and you carry the responsibility.

So let's answer the question honestly, including the parts that should make you cautious.

The problem with asking a chatbot to write your HACCP plan

If you open a general-purpose chatbot and ask it to write a HACCP plan for your bakery, it will produce something that looks convincing. It will have the right headings, plausible hazards, and confident-sounding control measures. And that is exactly the danger.

General AI models generate text by predicting what words are likely to come next. They don't calculate risk, they don't apply a validated decision tree, and they can produce information that sounds authoritative but is simply wrong. That's real value, because the biggest barrier for most small producers isn't the methodology, it's not knowing where to start.

The safety-critical work, though, shouldn't be left to a language model guessing.   4. Can you review and override everything? You're legally responsible, so you must stay in control.
  5. What's the output? Structured, auditable records beat generated prose every time.

If a tool answers those well, AI assistance is a real advantage. If it can't, you're being sold a chatbot with a food safety label on it.

Can AI build a HACCP plan? A general chatbot, on its own, shouldn't be trusted to.
