Food Safety for Drinks Producers: Gin, Beer and Soft Drinks

A food safety and HACCP guide for small UK drinks producers, from distillers and brewers to soft drink makers. The hazards that apply, where they differ by product, and how to build a plan that fits.

Drinks are food too

It's easy for a small distiller, brewer, or soft drink maker to feel that food safety guidance is written for someone else, for kitchens and bakeries, not for a still or a brewhouse. But drinks are food in the eyes of the law, and producing them safely carries the same fundamental obligations: registration, HACCP-based procedures, traceability, labelling, and the rest.

What changes is the hazard picture, which differs significantly across gin, beer, and soft drinks. This guide looks at food safety for drinks producers and how the risks vary by product.

The shared foundations

Whatever you produce, the baseline is the same. You must register your business, have food safety procedures based on HACCP, control your suppliers, maintain traceability, label correctly, and keep the relevant records. The prerequisite programmes, cleaning, pest control, hygiene, maintenance, apply to a production facility just as they do to a kitchen, and arguably more so given the equipment involved.

Drinks producers also have product-specific labelling considerations, including alcohol content and relevant statutory information for alcoholic drinks, alongside the standard requirements. And several of the 14 allergens are relevant: sulphites are a common consideration, and ingredients in flavoured and mixed drinks can introduce others.

Spirits and gin: the alcohol advantage, and its limits

For distilled spirits like gin, the high alcohol content is itself a significant control. The distillation process and the resulting alcohol level make the finished spirit a hostile environment for the microorganisms that cause foodborne illness, which simplifies parts of the hazard picture.

But that doesn't make the plan trivial. Considerations for distillers include:

  1. Botanicals and ingredients: the source, quality, and safety of botanicals and other inputs, and their traceability.
  2. Process safety: distillation is a physically demanding process with its own equipment and chemical considerations.
  3. Methanol control: managing the distillation correctly is a genuine safety matter for spirits.
  4. Flavoured and mixed products: added ingredients, sugars, or flavourings can change the hazard and allergen picture, particularly for lower-alcohol or ready-to-drink products.
  5. Labelling: accurate alcohol content, allergens (such as sulphites where relevant), and statutory information.

The lower the alcohol and the more that's added, the more the microbiological hazards can reappear, so a ready-to-drink canned cocktail is a different proposition from a cask-strength gin.

Beer: fermentation, ingredients, and packaging

Brewing has its own profile. Beer's combination of alcohol, low pH, and hop compounds makes it relatively inhospitable to harmful pathogens, but brewers still have real hazards to manage:

  • Raw materials: the safety and traceability of malt, hops, adjuncts, and water.
  • Process control: sanitation of equipment is central; the brewing and fermentation process must be controlled to produce a safe, consistent product.
  • Packaging: glass (a physical hazard), and for certain products the conditions inside sealed packaging.
  • Allergens: cereals containing gluten are central to most beer; sulphites and other ingredients may apply.
  • Cleaning and sanitation: arguably the most important prerequisite programme in a brewery, given the equipment and the risk of spoilage organisms.

Soft drinks: where the hazards are highest

Soft drinks deserve particular attention, because without alcohol to help, the microbiological hazards are more prominent. A soft drink's safety depends heavily on its own characteristics and processing:

  1. pH and acidity: many soft drinks are acidic, which helps control microbes, but low-acid drinks are higher risk.
  2. Preservation and processing: pasteurisation, preservatives, or other controls become important, especially for low-acid or juice-based products.
  3. Water safety: water is a primary ingredient and its safety matters.
  4. Ingredients and allergens: flavourings, additives, and ingredients in mixed products.
  5. Shelf life: setting it correctly, particularly for fresh or minimally processed juices and drinks, which can be higher risk.

A fresh, unpasteurised juice is a very different and higher-risk product from a high-acid carbonated soft drink, and the plan must reflect that.

Build a plan that fits your product

The clear theme across drinks is that the hazard picture varies enormously, from a high-alcohol spirit where alcohol does much of the work, to a fresh juice where it does none. A generic "drinks" HACCP plan can't capture that. Your plan needs to reflect your specific product, its alcohol level, acidity, ingredients, and process.

Know where your product sits, build a plan around its specific risks, and don't assume that because food safety guidance often pictures a kitchen, it doesn't apply to your still or brewhouse. It does, and getting it right protects both your customers and your growing brand.
